The addition of SugaVida Palmyra Blossom Nectar gives it a delightful caramel flavor that complements any dish!
Ingredients:
- 4 raw pasteurized egg yolks (preferably organic free-range)
- 1/4 tsp unrefined salt
- 30g (1/4 cup) SugaVida Palmyra Blossom Nectar
- 60 ml filtered water
- 236ml (1 cup) neutral keto liquid fat (e.g., high oleic sunflower oil)
- 1 tsp sugar-free vanilla extract (or the seeds scraped from 1 vanilla bean) – optional

Prepare the Base:
Add the egg yolks, salt, SugaVida Palmyra Blossom Nectar, vanilla (if using), and water to a warmed food processor. Blend for several minutes until the mixture becomes foamy and warm. -
Emulsify the Fat:
With the food processor running on low speed, slowly drizzle the keto liquid fat into the mixture through the hole on top of the lid. Continue blending as the mixture thickens. The cream will continue to thicken as it cools in the fridge. -
Adjust & Store:
If the cream doesn't thicken as desired, it can still be used as a sauce. Otherwise, store the cream in a sealed jar and refrigerate. It will last up to 5 days.
