Ingredients

(Makes 20-35 cookies depending on cutter size)

For the Cookies:

  • 80g grass-fed organic butter
  • 125g SugaVida Palmyra Blossom Nectar
  • 2 tbsp SugaVida Triple Strength Turmeric with Ginger
  • 100ml boiled filtered water
  • 250g spelt flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 tsp ground ginger
  • Large pinch of ground nutmeg
  • Pinch of sea salt

Method:

  1. Preheat your oven to 175°C (fan-assisted) and line a baking tray with parchment paper.

  2. Prepare the Cookie Dough:

    • Gently melt the butter in a saucepan or microwave, then add it to a mixing bowl along with the Palmyra Blossom Nectar.
    • Mix these ingredients thoroughly using a wooden spoon or electric mixer with a paddle attachment.
  3. Make the Turmeric Mix:

    • In a separate bowl, add 2 tbsp of SugaVida Triple Strength Turmeric with Ginger to the boiled filtered water, and stir well.
    • Pour this turmeric mixture into the melted butter and Palmyra Nectar mix, combining everything together.
  4. Sift the Dry Ingredients:

    • In a separate bowl, sift together the spelt flour, baking powder, cinnamon, ginger, nutmeg, and salt.
    • Gradually fold the sifted dry ingredients into the wet mixture until the dough begins to come together.
  5. Form the Dough:

    • If using an electric mixer, switch to a dough hook and mix until the dough forms. You may need to use your hands to complete the mixing process.
  6. Chill the Dough:

    • Wrap the dough in parchment paper and refrigerate for around 10 minutes to help it firm up.
  7. Roll & Shape the Dough:

    • On a lightly floured surface, roll the dough out to about ½ inch thick for softer cookies, or ¼ inch for crispier ones.
    • Use your favorite Christmas cookie cutters to create festive shapes.
  8. Bake the Cookies:

    • Place the shaped cookies on your prepared baking tray and bake for 10-12 minutes, or until golden brown.
  9. Cool and Decorate:

    • Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to crisp up.
    • Decorate with icing or festive sprinkles, if desired.
  10. Storage:

    • Store the cookies in an airtight container for up to 4 days, or freeze them without decorations until you’re ready to serve.
